Ingredients:
- 3 eggs
- 1 cup of sugar
- 2 cups spelt flour
- 1 cup of seed oil
- Juice of 3 oranges and grated peel thereof
- 4 cm grated ginger
- ½ sachet of baking powder
Procedure:
1) Grate the peel of the oranges and then extract the juice.
2) In a bowl, combine the egg yolks with the sugar using electric whips until light and creamy.
3) Add the grated zest of the untreated oranges and the grated fresh ginger.
4) Mix everything together and add the juice from the oranges and the seed oil.
5) Emulsify with a hand whisk and add sifted baking powder and flour.
6) Separately, beat egg whites until stiff with a pinch of salt.
7) Incorporate the stiff egg whites into the mixture, stirring gently with a spatula.
8) Transfer to a greased and floured 24-cm-diameter cake pan and bake at 170° for 35 minutes.
9) Once baked and left to cool, dust with powdered sugar and, if desired, caramelized orange peel
